I worked and qualified as a chef at The
Bun Shop during the mid-1990s when the place was run by Peter Fagg (I
believe he was the former owner of the Old Dot Jazz Club just around the
corner, which closed some years earlier). It was a great place to work and I
have some fond memories, including a chef who was into acid house music and
sometimes came into work as high as a kite, and the night a man walked into
the back entrance of the kitchen with a knife, only to run off after being
met by a chef with an even bigger knife! After the late shift while we were
doing the clean-down, we would all order our beers to beat last orders (ah,
the days before extended opening hours!) and a large portion of sticky
toffee pudding and custard or similar. Although there might be typical
flared tempers in the kitchen, there was a deep-down closeness between the
staff and we could all sit down to a drink and chill at the end of a busy
shift. |
